About the Producer

Fausto and Cinzia Cellario are third-generation winemakers in Carrù, on the southern edge of the Langhe in Piedmont, and they represent a very different side of the region. 

 

The family works exclusively with indigenous Piemontese varieties, defends local winemaking traditions fiercely, and farms all organically. All fermentations take place with indigenous yeasts, and sulfur is only added in tiny quantities at bottling when necessary. 

 

The È Rosso is their 1-liter Barbera: hand-harvested into small bins, spontaneously fermented with 10 days of maceration, aged a year in large cement tanks, and bottled without fining or filtering. 

 

Fausto describes it simply as the wine his grandfather made, and that's exactly what it tastes like.

Why I Chose this Wine

I've met Fausto a few times over the years, first at a natural wine fair in Paris and then at his winery, and every conversation feels like a masterclass. 

 

He's that rare combination of deeply knowledgeable and genuinely generous with what he knows. 

 

One thing he shared that stuck with me is how he approaches fermentation: instead of starting a whole tank from scratch, he seeds it using a small active starter from just a few crates of fruit first, the same logic as a sourdough lievito madre, building a healthier and more natural fermentation from the ground up. 

 

The È Rosso is the wine his grandfather made, in a 1-liter bottle with a crown cap, priced to be drunk without ceremony.
