TASTING NOTES:
Nose: Blackberry, cherry, mixed red forest fruits; leather and earthy mushroom notes; hints of spice

Palate: Juicy and fresh with savory and youth; soft tannins + easy drinking

 

FOOD PAIRING RECOMMENDATION:
This is a great pizza wine
Grilled sausage and peppers

 

ASHWIN'S REFLECTION:
I’ve met Fausto, the winemaker of Poderi Cellario, a few times now—two years ago at a natural wine fair in Paris and then again at his winery in Cuneo—and each time I met him, I feel like I just had a masterclass in natural wine.

Fausto is both knowledgeable and generous with his knowledge. For example, he recounted to me his discovery around practicing a healthier natural fermentation by borrowing a concept from sourdough bread-making, using a “starter” or “lievito madre” as it’s known in Italian. Instead of starting a fermentation from scratch on an entire batch, he starts a smaller fermentation with fruits from just a few crates. Once that fermentation is active and strong, he adds it to the rest of the must and voila, a healthier but still natural fermentation.
