Piližota is a small family winery working vineyards in the hills inland from Šibenik, in Central Dalmatia, at elevations between 50 and 300 meters, where red and brown clay soils sit over a limestone base and cooling breezes roll in from the coast. The estate farms organically, with no irrigation and only minimal sulfur applied in spring, and all fruit is hand-harvested. This Babić is fermented spontaneously in open stainless steel vats with about ten days on the skins, then aged roughly six months in large, used 600-liter Slavonian oak barrels, with very little sulfur added at bottling. The winery produces around 40,000 bottles a year, built almost entirely around Babić, one of Croatia's rarest indigenous red grapes.
