Sarakiniko means "the Saracen's place": coves along the coast where raiders once found shelter, or so the island legend on Paros goes. What gets me is that you can taste that same coastline in the glass.
Paros is small enough that the sea is never more than a few miles away, and that proximity gives this Assyrtiko a fuller, saltier weight than the grape usually shows elsewhere, the kind of minerality that tastes less like stone and more like the ocean itself.
