Luís Pato is widely known as the "rebel producer" of Bairrada, a winemaker who began producing under his own name in 1980 and built his reputation on a single conviction: that Baga, the indigenous red grape of the region, belonged on the world stage.
His approach to Baga was transformative: he harvests the same vineyards twice, once in late August for sparkling wine and again in late September for concentrated reds, a method that helped redefine what the grape could be.
His vineyards at Quinta do Ribeirinho are farmed organically, and his winemaking across the range prioritizes native varieties and a clear sense of place.
The Informal is his sparkling rosé: pure Baga made in the traditional (Champagne-style) method, with extended lees aging that gives it the creamy depth and savory complexity that has made it one of Portugal's most distinctive sparkling wines.
