TASTING NOTES:
Nose: Under-ripe strawberry, red currant, white nectarine, crème fraîche / whipped cream; vegetal element too: tomato leaves or bloody Mary-esque

Palate: Delightfully creamy and decadent texture with lively brightness that’s characteristic of Baga

 

FOOD PAIRING RECOMMENDATION:
Scallop crudo w/ citrus zest
or
Stracciatella w/ strawberry-rhubarb jam and sourdough toast

 

ASHWIN'S REFLECTION:
I met Luis Pato for the first time back in 2018 or so, and I was taken at the time (and continue to be today) by his commitment to what makes Bairrada unique and his efforts to highlight those qualities. He focuses on indigenous grapes and minimal intervention in a way that has inspired others in the region to do the same.

Luis is, in fact, a big part of the inspiration for “Rebel Winemakers” because he is one of the most quintessential rebel winemakers I’ve ever met. He realizes his freedom of creativity in wine in a way that I find personally inspiring.
