The Fluteau family has been making Champagne in the Aube since 1935, back when the Côte des Bar was still finding its footing as a recognized wine region.
What started with Emile Hérard and his son-in-law Georges is now in its fourth generation, with Jérémy Fluteau leading the winemaking and his sister Adeline and wife Mathilde joining him in 2022.
I love that this is still a true family operation, farming their own estate vineyards in Gye-sur-Seine and holding an HVE certification for sustainable practices. The Symbiose is their flagship statement: equal parts Pinot Noir and Chardonnay, aged on the lees for a minimum of seven years. That kind of patience is rare, and you taste it.
