Nose: complex and layered
Gently floral, white flowers; green pear; mineral-y → chalky; slightly nutty; lemon zest and hints of nutmeg; lightly brioche-y
Palate: Lovely creamy texture with hints of oxidative notes from long lees aging while maintaining freshness

Amberjack crudo w/ ponzu

Potato-leek soup w/ crème fraîche

Roasted butternut squash with toasted pecans and/or pumpkin seeds
ASHWIN'S REFLECTION:
The maison dates back to 1935, and Fluteau makes a proper statement with this millésime (vintage) expression which carries a beautiful complexity on the nose and palate → floral, mineraly, nutty, fruity, bready. It’s rare to find a Champagne that hits across so many dimensions. The long lees aging (over 5 years) plus the bottle-aging that follows allows this wine to shine at its highest potential.
