Iago Bitarishvili is more of a philosopher than winemaker. He was the first producer in Georgia to earn organic certification, and has since become one of the country's most influential advocates for traditional qvevri (amphora clay pot) winemaking.
Some of his qvevri date back 300 years and are housed in a separate brick-lined building called the Marani; grapes are fermented with skins and stems using only natural yeasts, without filtration or added sulphur.
Iago believes in minimal-intervention winemaking and talks about his wine like a poet.
