TASTING NOTES:

Apricots, sage, peach gummy candy (aroma but not on the palate). A little bit [sea-weed-y?] w/ some fresh white peach and green tea → w/ some jasmine. Lightly, lightly grassy/herbal.

Balanced beautifully on the palate: round + persistent but not overwhelming in both acidity + tannins. Gently building + long-lingering tannins. Fairly light body.

FOOD PAIRING RECOMMENDATION:

walnut-stuffed eggplant w/ dusting of parsley
or
umami-driven grilled meats i.e. miso rubbed pork chop or mushroom

ASHWIN'S REFLECTION:

This is one of the most special wines to me. I met Iago ~10 years ago, and much of my philosophy around wine was inspired by him. If you watch In Pursuit of Flavor, you’ll see why :)
