TASTING NOTES:
Nose: floral, ocean, bright fruit
complex florality: saffron and jasmine flowers; sea breeze, crushed sea shells, saline; lemon zest and underripe nectarine
Palate: Vivacious in the back of the palate with a round, slightly oily texture that complements the inherent brightness of the wine.
FOOD PAIRING RECOMMENDATION:
Pasta or lasagna with pistachio
or
fried calamari w/ tartar sauce
ASHWIN'S REFLECTION:
The winemaker Marco De Grazia has named this bottling after his daughter Elena (dubbed “Eli” for short), and he even features her artwork on the label design. This is a project born out of passion and love, which extends to how the vines are looked after: organic farming in the vineyards plus native yeast fermentation in the cellar. The result is a serene expression of Etna Bianco (the primary variety of which is Carricante) that stimulates the nose and the palate across floral, mineral, saline, and fruit flavors.
