TASTING NOTES:
Forest fruits and earthy → cherries and blackberry with tobacco leaf undertone. Lightly picking up aromas of tar and asphalt as well as delicate herbs like lavender. Plum on the finish
Well-structured wine w/ medium acidity and body + firm, chewy tannins → yum :)
FOOD PAIRING RECOMMENDATION:
Orecchiette pasta with fennel sausage + broccoli rabe
or
Spaghetti aglio, olio, pepperoncino w/ blistered tomatoes
or
Ratatouille
ASHWIN'S REFLECTION:
Ginevra highlights the potential of an “afterthought” variety w/ this expression → 90% ciliegiolo and only 10% sangiovese. Most of the time sangiovese drives the blend + the flavors, but here Ginevra has chosen to let the ciliegiolo sing, and sing it does!
