Nose: Orchard fruit; bready, mineral-y
Green apple (ripe) and perhaps pear as well; croissant, brioche, yeast-y; lightly buttery chalky minerality
Palate: Feels like a hint of sweetness + roundness despite no dosage → well-balanced with a touch of austerity while still being approachable

Pan-seared scallops with butter, lemon zest, and garlic

ASHWIN'S REFLECTION:
The estate is named after the founder, but today the estate is run by Olga’s granddaughter, Sylvie Raffault. The raison d’être for this wine, as evidenced by its name, is to show off the freshness that Chinon (region) Cabernet Franc (variety) can express → Sylvie amplifies by using all stainless steel — no oak — plus some whole berry fermentation. The estate is certified organic and the vines are manually harvested.
