TASTING NOTES:
Nose: orchard fruit, nutty lees-y
bright, underripe green apple and pear; macademia nuts, peanut shell
fresh baked bread, lees-y, butter
Palate: Bright and lees-y on the palate with a creamy texture. Dosage 4 g/L.

Trout with almonds - seared trout w/ butter + toasted almonds

ASHWIN'S REFLECTION:
The estate has its roots beginning in 1919 when Xavier Richard began acquiring properties in the area, but it wasn’t until his son Jean Richard took over that the estate began focusing on wine. By 1947, the domaine had established a local reputation for the quality of its wines and by 1976, Pierre Richard had begun to exert his influence on the growing domaine. Nowadays, Vincent has taken over and continues to hone the family’s process as is expressed in this wine: a 100% Chardonnay from 35-yr old vines grown on clay and limestone soils, hand-harvested and fermented in stainless steel before undergoing secondary fermentation in the bottle. The wine is aged 24-36 months on the lees before disgorgement.
