TASTING NOTES:
Nose: Bready, mineral-y, orchard fruit
Baguette, sourdough bread crust, dried apple, limestone and a bit chalky; hint of nuttiness
Palate: More horizontal and decadent; not as direct and linear but more breadth + luxurious mouthfeel
FOOD PAIRING RECOMMENDATION:
Fried chicken with flaky salt
or
Pork schnitzel with mustard
or
Endive and walnut salad
ASHWIN'S REFLECTION:
Thibaud Brocard is the 5th generation in the family at the estate, and he’s taking — by Champagne standards — an extremely natural/low intervention approach including organic farming and native yeast fermentation for the primary fermentation. This wine sees majority stainless steel which helps to preserve some of the freshness to accentuate the bready + breadth-y nature of this Champagne. For those who prefer rounder, lees-driven, luxurious mouthfeel Champagnes, this wine is heavenly.
