TASTING NOTES:
Nose: Tropical fruit, cream. Lychee, grapefruit pith, watermelon, strawberry and cream → chantilly, cherry.

 

Palate: Round and pleasant on the palate with lingering cherry, cream, and chalkiness.

 

FOOD PAIRING RECOMMENDATION:
Scallop crudo with citrus, or grapefruit, arugula, and blue cheese salad.

 

REFLECTION:
Mataro (aka Mourvèdre) isn't often highlighted as a primary variety in a blend, partially because it can be quite finicky to work with in the vineyards. Tim Smith takes on an even bigger challenge by working with old vine Mataro and dry farming it. There's less than 400 cases of this wine made every year, and it's a beautiful expression of Mataro while managing for the fact that it can be more tannic by opting for a rosé instead of a red.
