TASTING NOTES:
Nose: Bramble, floral, cream
Bramble, berries, cherry, strawberry, blueberry; violet petals + tar; hints of vanilla / crème chantilly
Palate: Lively acidity but certainly more moderate by typical Beaujolais standards with delicate tannins as well
FOOD PAIRING RECOMMENDATION:
Saucisson sec (classic French dry-cured sausage) with cornichons and dijon mustard
or
Radishes with butter and flaky salt
ASHWIN'S REFLECTION:
If you couldn’t guess from the label, Thibault is an avid cyclist in addition to being a talented winemaker. He is the son of a viticulturalist and grew up in and around the vines. In 2019, he purchased his first parcel of land and hasn’t looked back. He practices organic farming, and the winemaking is minimalist and respectful: hand harvesting, carbonic maceration, indigenous yeast fermentation, no fining or filtering, and minimal sulfur at bottling only if necessary.
