TASTING NOTES:
Mineral-driven aromas: river rocks, creek + water, not super saline but more chalky and gravel/limestone-y. Lime zest and green melon (under-ripe) w/ tart pear and lemongrass. Lightly floral too + a bit more saline on the finish.
Sleek, linear acidity but not too sharp. Medium body and well-balanced.
FOOD PAIRING RECOMMENDATION:
Arugula + feta + grilled peaches + balsamic reduction
or
Turkey stuffing
or
ceviche w/ avocado + citrus
ASHWIN'S REFLECTION:
“Gorro” means cap and is a nod to the traditional fisherman’s hat, which is fitting since we’re just 5 km from the Atlantic Ocean w/ these vineyards. Everything here is done by hand, and I can’t overstate how important that human care is. We drink wines in unPINNED that are almost exclusively worked by hand but broadly speaking it is not the norm (though I would like for it to be). This wine blew me away, and I hope it blows you away too.
