TASTING NOTES:
Nose: saline + mineral-y as well as citrus + fruit: grapefruit rind, green apple, peach blossom and white peach. Lightly butter-popcorn-esque; hints of caramel. Wet limestone.
Palate: Just enough electricity on the palate to balance a delicately creamy texture and light body → an elegant wine
FOOD PAIRING RECOMMENDATION:
grilled fennel, grilled sausage, grilled green apple drizzled w/ honey
or
falafel + hummus + tabouleh
ASHWIN'S REFLECTION:
Juliette and Caroline Chenu run the estate today and represent the 5th generation of the family to make wine at the estate. The expression is reminiscent of Chablis but with a little more textural weight and a little more waxiness on the palate. Juliette and Caroline practice organic farming at the estate and have been working as a team for years. In the cellar, it’s native yeast fermentations plus aging used oak casks to allow for a pretty evolution of the wine while micro-oxygenation but without heavy oak influences in the expression of the wine.
