TASTING NOTES:
Cherries, blackberry, dried rose petals, chestnut or other dark nuttiness (i.e. not oxidative), figs and fig jam
Lively acidity and medium body. Gentle but progressively building tannic structure. I would also recommend this wine chilled — fridge temp; not ice cold.
FOOD PAIRING RECOMMENDATION:
Two things come to mind as I sip this:
- BBQ — ideally vinegar-based; pretty agnostic on which protein, but I think pork would do best.
- Eggplant + tomato → either
a) Pasta alla norma
b) Eggplant Parmesan
