Sage, lemons, persimmons, wet slate, dark rocks (not gravel-y), piney mountain air, goat skin, pine needles, white fruits
Bright acidity and fairly full-bodied w/ perhaps a touch of tannins from the short skin contact.

Chili-rubbed grilled endives w/ crushed + toasted almonds on top
