TASTING NOTES:
Nose: slightly more austere & refined for Beaujolais
aromas of blackberry, tar, black tea;
herbal → dried lavender, white pepper
cherry and slightly chalky
Palate: Bright acidity and a bit juicy with medium body and gentle tannins in the front of the palate
FOOD PAIRING RECOMMENDATION:
Roast chicken with vinegar and shallots
or
Lyonnaise potatoes → crispy potatoes sautéed w/ onions, parsley, vinegar

Domaine des Billards has belonged to the Barbier and Tessier families for over 200 years — they have a long history and heritage tied to the land of Saint-Amour. In fact, Saint-Amour is one of Beaujolais’s smallest crus with incredibly varied soils such that the longstanding heritage and connection to the land make all the difference. A 100% Gamay, as you’d expect, a weighted grill keeps the cap (the otherwise floating skins from the fruit) submerged in the fermenting juice thereby enabling a gentle extraction of the tannins, which you can feel very directly on the palate when you taste this wine.
