TASTING NOTES:
Nose: You can smell the age on this wine with its ever so slightly oxidative + reductive twinge. Aromas of tobacco, gravel, graphite sit alongside blackberry, cherry, and elderberry. Hints of allspice and black pepper with delicate chocolate.
Palate: As complex on the palate as the bouquet on the nose → moderate acidity, full body, and long, lingering tannins that express themselves in a persistent finish.
FOOD PAIRING RECOMMENDATION:
Braised red meats with some kind of glaze or berry sauce
or
Chicken pot pie / chicken + dumplings
ASHWIN'S REFLECTION:
The Entre-Deux-Mers region of Bordeaux has long been overlooked because there are more famous names and brands in other nearby regions of Bordeaux; however, if you know where to look, you can find some simply stunning wines that you might not have found otherwise. Château Jean Faux—a small estate using minimal intervention techniques in the cellar and organic + biodynamic practices that extend to the farming—is a region more well-known for wines that are more manipulated in the cellar. This is a simply standout expression of Bordeaux heritage, Cabernet Sauvignon and Bordeaux terroir with less manipulation.
