Jules Chauvet is a name that’s known in natural wine circles as one of the pioneers of minimal intervention winemaking of the kind that results in the wines that Beaujolais is famous for. Importing what Chauvet knew and practiced were Beaujolais “gang of four,” of which Chauvet’s mentor Marcel Lapierre was one. Today, Mathieu Lapierre continues the legacy at Château Cambon maintaining the same minimal intervention ethos that rely on healthy grapes, organic farming in the vineyards, and native yeast fermentations in the cellar bringing to life a wonderfully expressive 100% Gamay.
