TASTING NOTES:
Nose: Chamomile, linalool, peach gummy, white pepper, black pepper, wet slate.
Palate: Lovely oily texture with a gently chalky finish.
FOOD PAIRING RECOMMENDATION:
Farro salad with green olives and feta, or fried olives ascolana.
REFLECTION:
The Chalmers family were (and I'd argue still are) pioneers in the Australian wine scene, favoring Italian varieties over the French varieties everyone else favored. Their thinking was simple: plant the varieties that would fare the best in Australia's climate, not the varieties with the most name recognition. The results are wines with a beautiful freshness that need less coaxing in the fields because the vines themselves are naturally more well-suited to the climate.
