TASTING NOTES:
Lovely ruby red color + ruby red fruits: wild raspberry, juicy strawberry and blood orange peel + flesh. Gentle salinity + minerality in the background providing aromatic complexity. Rhubarb, sour cherry, and twizzlers.
Delicate fine bubbles with fresh acidity and hints of tannins
FOOD PAIRING RECOMMENDATION:
BBQ or Korean BBQ or Bourbon chicken
or
Mortadella + pistachio
or
Turkey w/ cranberry sauce
ASHWIN'S REFLECTION:
It’s quite rare to find sparkling red treated with the care of champagne method (metodo classico), but that’s what we have here, and that’s why the bubbles are so creamy & delicate. This bottle in particular was hard to find because it’s a more special edition having spent 78 months on the lees, that long, long aging gives rise to one of the most complex + elegant Lambrusco’s you’ll ever find.
