TASTING NOTES:
Apricots, sage, peach gummy candy (aroma but not on the palate). A little bit [sea-weed-y?] w/ some fresh white peach and green tea → w/ some jasmine. Lightly, lightly grassy/herbal.
Balanced beautifully on the palate: round + persistent but not overwhelming in both acidity + tannins. Gently building + long-lingering tannins. Fairly light body.
FOOD PAIRING RECOMMENDATION:
walnut-stuffed eggplant w/ dusting of parsley + paprika
or
umami-driven grilled meat i.e. miso-rubbed pork chop or mushroom
ASHWIN'S REFLECTION:
