ASHWIN'S REFLECTION: Mavrud is the Thracian Valley's ancient indigenous grape, grown in the area since the time of the Thracians who basically invented the concept of Dionysus. When the Ottomans arrived in the late 14th century, commercial winemaking collapsed under Islamic prohibition and the accompanying punishing taxation. Between small local winemakers cultivating Mavrud and the Bulgarian church shouldering responsibility for preserving winemaking traditions, the grape and its legacy have survived for centuries.
In this bottle, we have Dimitar Kostadinov's continued exploration with more natural winemaking practices from indigenous grapes — in this case a 100% Mavrud rosé pet nat. It's the same ancient grape, made simply and organically using the ancestral method for sparkling wine.
