Title

TASTING NOTES: Nose: Diverse bouquet with complexity. Lemon, lemon blossom, chamomile, lemon soda; petrol, limestone, wet slate; butter, leesy, crème fraîche. 

 

Palate: Very clean and also horizontal feeling, i.e. fills the mouth with flavor along with a creamy texture.

 

FOOD PAIRING RECOMMENDATION: Chicken pot pie or Paneer tikka (dry)

 

ASHWIN'S REFLECTION: Štajerska is Slovenia's name for Styria, the same rolling hills that straddle the border with Austria, and for centuries it formed the heart of Habsburg wine country. Šipon, the local name for Furmint, was one of the very first wines of the Habsburg monarchy, called across the empire under different names. 

 

One legend has it that Šipon is a corruption of what Napoleon's soldiers said when they first tasted it: "si c'est bon," French for "if it's this good," which got shortened to Šipon (pronounced like ship-on). Matija Žerjav aka Matic was only 24 when he took over managing the winery, and he cultivates 9 hectares using organic and biodynamic methods in an attempt (a successful one in my opinion) to authentically showcase the terroir.
