TASTING NOTES:
Nose: Golden apple, persimmon, guava, spearmint & other herbs, very light goat skin, mineral-y: ash & rain on asphalt & limestone.

Palate: Vibrant acidity despite the age with beautiful volcanic complexity, and deceptive because it seems sweet but has less than 1 gram of residual sugar.

 

FOOD PAIRING RECOMMENDATION:
Charcuterie board featuring goat cheese
or
Spinach & artichoke dip

 

ASHWIN'S REFLECTION:
I've never once in my life had a sparkling Juhfark before, and as soon as I tried this, I fell in love with it because of how complex it is on so many dimensions. This is a volcanic wine from a very rare grape that's sparkling and has 6+ years of age on it — any one of those elements makes for a dynamic wine, but all those elements together result in a wine unlike any other that I've tried, hence why I'm eager and excited to share it with you.
