TASTING NOTES:
Nose: Mineral-driven, dark fruit. Gravel, asphalt, tar; blackberry, black plum, savory notes & straw; crushed seashells.
Palate: Vibrant acidity with lighter body and delicate tannins. Definitely can be served chilled.
FOOD PAIRING RECOMMENDATION:
Charred, grilled steak with chimichurri
or
braised octopus
ASHWIN'S REFLECTION:
País is the oldest commercial wine grape in Chile, though nowhere near the most widely planted. It was brought from Castilla-La Mancha by Spanish missionaries in the 1550's, planted wherever they settled to ensure wine for Mass. The first vines arrived in Itata in the early 1550s, making this valley among the oldest wine regions in the Americas. For the following four centuries, País was a workhorse grape, but when Chile started chasing the export market, País got left behind. The variety mostly survived because subsistence farmers didn't have the money to replant. That neglect, however, turned out to be a gift as many vines of País are 100+ years old, including in this bottle here.
