TASTING NOTES:
Nose: Savory, tomato leaf, herbs, flinty; straw/hay, watermelon, green apple, pear skin.
Palate: Gentle acidity with a lot of structure and delicate tannins — definitely a more serious-feeling rosé.
FOOD PAIRING RECOMMENDATION:
Watermelon drizzled with olive oil and crushed pink peppercorn, or crostini with lard and cherry jam.
ASHWIN'S REFLECTION:
While the Doja winery wasn't founded until 2010 by the Todić family, the ancestral roots date back to 1879, when Milen planted the first vineyards with the autochthonous variety Prokupac. Located in the south of Serbia, in the wine region of Toplica, the Todić family places an emphasis on cultivating the indigenous varieties of the region, with some noble varieties blended in for support. This wine in particular is mostly Prokupac with a small percentage of Merlot, Cabernet Franc, or Shiraz as a supporting blend.
