Title

TASTING NOTES:
Nose: Jammy fruit, smoke, minerality. Raspberry jam and cherry coulis; hickory smoke & barbeque smoke; flinty; asphalt, tar; roses.

Palate: Juicy, jammy, and wonderfully drinkable. Absolutely a chillable red.

 

FOOD PAIRING RECOMMENDATION:
Grilled/charred ribeye w/ morel mushrooms
or
Charred asparagus with mint

 

ASHWIN'S REFLECTION:
For most of the 20th century, Etna's grapes ended up in blending vats on the Italian mainland and in France. By the early 21st century, only a handful of wine producers remained on Mt. Etna. But, the rediscovery of old vine abandoned vineyards + the arrival of a handful of pioneers + the first few modern, serious expressions of Sicilian varieties led to a huge resurgence with over 100 winemakers now on Mt. Etna soils. Ayunta is a small organic winemaking project led by Filippo Mangione who aims for honest Etna expression in the bottle.
